The founder

Twenty-one years of service.
Two years of relentless research and development.

Ten years serving in the United States military. Eleven years working with defense companies. And then two years studying the craft — the water chemistry, the fermentation science, the traditional techniques that built the most legendary bagel shops in New York City.

When I decided it was time to bet on myself, I didn't guess at what a great bagel should be. I identified the standard. I studied the process. I invested in the equipment, the ingredients, and the technique required to meet that standard without compromise.

No culinary school. No restaurant experience. But a level of preparation and obsession that most people in this industry never apply.

When I moved to Florida I kept looking for it. I kept coming up empty.

So I did what a lifetime of military discipline and business experience taught me to do — I identified the problem, studied the solution, and built it myself.

Two years of research. Industry consultants. Deep study of the water chemistry, fermentation science, and traditional techniques behind the most iconic bagel shops in New York City.

I could have named this place anything.

I chose Two Daughters because when I finally decided to go after the thing I had always wanted, I wanted them to see it.

I wanted them to know that the dream you carry your whole life is always worth chasing.
